Summer time is stronly connected to this dish since zucchini is at its best. Combined with simple ingredients, the combination of zucchini, fresh spearmint and local cheese compose a very tasty dish.
1 kg zucchini, grated
1 egg white
5-6 tbsp flour
300 white goat cheese
1/2 cup chopped spearmint
1 dry red onion, grated
Mix: Flour, a little cornflour, sesame
olive oil to fry them
– Add salt to the grated zucchini and let it sit for a while. Drain well.
– Mix all ingredients in a bowl and make sure is firm enough.
– Keep in the refrigerator for a while
– Heat up olive oil in a pan, take a tablespoon of the mix, shape it round and flat, cover it with the flour mixture and fry both sides in medium fire until brown.
