For a balanced nutrition, it is very important to consume pulses at least twice per week. In winter time we cook them in a form of soup however, there are so many recipes to enjoy pulses during summertime as well. Below, you have a recipe for a tasty salad with lots of veggies and of course olive oil.
250 gr. white beans
2 potatoes in medium cubes
2 carrots in medium cubes
1 cucumber
1 red bell pepper or chili pepper
1 spring onion, chopped
1 tomato, chopped
Olive oil
Sea salt
1/2 lemon juice
– Boil the beans with the carrots and potato. In the end add salt
– Dry them (keep a little of the water) and let them sit until cold
– Blend the juice from the beans, with the olive oil and the lemon juice
– Mix vegetables with the beans and the dressing. Blend well and chill for 30 minutes.
