“SFAKIANI” CHEESE PIE

This pie took its name from the Village “Sfakia” which is located on the south part of Chania. It takes a lot of practice to make it as it is very thin and stuffed with myzithra cheese. We serve it hot with thyme honey on top however, you can also use it as pita in salty recipes and combine it with meat or vegetables.

Dough:
500 grams white flour
100 ml olive oil
1 shot of raki
Pinch of salt
Water until you get a soft dough

Stuffing:
400 grams myzithra cheese

Topping:
Thyme Honey

 

– Prepare dough and let it rest for at least an hour
– Seperate dough in 5 balls
– Separate cheese in 5 a bit smaller balls
– Open each ball with your hands and place the cheese in the middle.
– Cover cheese with the dough and make sure that you remove the air
– Open the pie carefully with the dough stick and make sure you add enough flour during this procedure
– Drizzle olive oil in a saucepan and cook the pie both sides.
– Serve with thyme honey on top
