Always keep a packet of orzo in your kitchen cabinet. You can make delicious dishes in a very short period of time and with whatever you have in the refrigerator. This is how this dish came up and I hope you try it. Also, never forget to try new things in cooking, it is the key to add new flavors in your diet. When cooking new dishes, the worst thing that can happen, is to make a food that is not tasty, you shouldn’t let this stop you from trying new things!
250 grams medium size orzo
50 ml olive oil
1 onion finely chopped
4 white mushrooms, finely sliced
2 zucchini, finely chooped
1 garlic clove, chopped
1/2 glass of white wine
600 ml vegetable stock
Orange zest
Olive oil
Salt, ground black pepper, oregano
– Heat olive oil in a pan and brown orzo for a couple of minutes in medium fire
– Add onion and garlic after 2 minutes
– Add mushrooms and when they soften turn the fire up and add wine.
– Wait until alcohol evaporates and then add the zucchini
– Add vegetable stock and slowly cook the orzo until it absorbs the stock and it is cooked.
– Add salt, pepper and oregano towards the end of the cooking proccess.
– Let it sit for a while and serve.
You can add some Graviera cheese on top, it’s really tasty!
