THEIR ACTUAL NAME IS “KALITSOUNA” AND IT IS A CHARACTERISTIC CRETAN SNACK. WE STUFF THEM WITH MANY INGREDIENTS HOWEVER, THIS ONE IS MY FAVORITE.
Dough:
3 cups of flour 70%
1 shot of raki or red vinegar
100 ml olive oil
Pinch of salt
Water (as much as you will need to make the dough a little hard)
Stuffing:
2 cups of fresh goat cheese (myzithra)
1 cup grated “malaka” cheese
1 cup fresh soft cheese (anthotyro)
3 cups of fresh chopped spinach
1 egg
3 chopped spring onions
1/2 cup fresh spearming, chopped
Olive oil
Salt, grounded black pepper
– Prepare the dough and let is sit for at least one hour
– Chop the spinach and the spring onions and put them in a bowl with the spearmint. Sprinkle some salt and mix well
– Add cheeses and egg in the stuffing and stir well. Add a little olive oil, salt and pepper.
– Open a thin dough and cut in circles.
– Add a tablespoon of stuffing in the one half and cover with the other.
– Secure well and fry in olive oil until brown
– Alternatively, you can spread some beaten egg, black and white sesame seeds and bake them in the over for 35 minutes
