A tasty fava dip enriched with the sweet flavor of caramelized onions and cherry tomatoes. Our recommendation to cook Fava in a different way.
Fava:
1 glass fava beans
3 glasses of water
1 smal red onion
1 bay leaf
Salt
– Put all ingredients in a pot and cook in low fire until water is fully absorbed
Caramelized onions and cherry tomatoes:
3 large red onions, sliced
100 ml olive oil
15 cherry tomatoes
4 tablespoons balsamic vinegar
1 leek, sliced
1/2 tbsp ground black pepper or lemon pepper
1 bay leaf
Sea salt
– Put olive oil in a pan with the bay leaf, lemon pepper, onions and leek and brown them in medium fire
– Turn fire in low and let them slowly cooked for 20 minutes
– Add cherry tomatoes and continue cooking
– Just before onions and cherry tomatoes are ready, turn fire to medium and add balsamic vinegar and salt
– Cook for another 3 minutes
Serve fava, onions and tomato on top and some lemon zest. Srpinkle with olive oil and oregano on top.
