In winter time, we cook this dish a lot all over the country! Always served with feta cheese, “Fasolada” is a tasty and healty stew with white beans and winter vegetables such as celery and carrot.
250 grams dry white beans soaked in water for at least 8 hours
1 big dry onion, finely chopped
1 leek, chopped
Plenty of fresh celery
100 ml olive oil
2 carrots, diced
3 tomatoes, grated
10 cherry tomatoes
1 tablespoon tomato paste
1 litre water
1/2 tsp tumeric
Salt, ground black pepper
1 red chili pepper
– Blanch beans twice in hot water and then strain
– Heat olive oil in a pan and saute onion and leek
– Add carrot and beans and continue browning for another 2 minutes
– Add tomato, water, tomato paste, celery, chili pepper, cherry tomatoes and tumeric
– Cook in low fire until beans are soften and you get a creamy soup
– Add salt and pepper
