Cretan scrambled eggs

Try this recipe with fresh seasonal vegetables and graviera cheese. A quick and tasty dish for egg lovers!

 

4 large eggs
4 tbsp milk
4 tbsp olive oil
2 spring onions, white part only, sliced
1 medium zucchini, sliced
1 tomato without seeds
Salt, black pepper
Chives, chopped
Graviera cheese, grated

 

– Heat olive oil in a pan and brown the zucchini, onions and tomato after about 2 minutes.
– Beat the eggs with the milk and a pinch of salt
– When vegetables are ready, add eggs, salt, pepper and in a medium fire stir slowly until eggs are cooked
– Serve with chives and graviera cheese on top.
