You can find this dish cooked in different ways through the island. Some prepare it with dough, others dont. Some add fresh grated tomato, others dont. No matter how you eat it, the flavor of the fresh spearmint and the cheesy flavor of myzithra goat cheese are so good! The recipe below comes with a dough recipe. Enjoy!
Dough
1/2 kg white flour
1 shot raki or vinegar
2 tbsp olive oil
salt
water
Stuffing
1 kg sliced zucchini
1/2 kg sliced potatoes
300 gr “myzithra” cheese (try ricotta if you cannot find it)
1 cup fresh chopped spearmint
1 big tomato, grated
100 ml olive oil
Salt, black pepper
Black and white sesame
– Prepare the dough and let it sit for a while.
– Mix all stuffing ingredient in a bowl and add salt in the end
– Separate dough in two parts and open with a stick, medium thickness (make sure the one that will go to the bottom of the pan is bigger)
– Oil a baking pan and put one fyllo, the stuffing and cover with the other on top.
– With a knife cut into portion (but not all the way down)
– Add black and white sesame
– Bake at 180℃ for about two hours. Let it sit before serving.
